Winter Warming Rice

Fry 3 cloves of chopped or crushed garlic, 1 chopped chilli and some finely chopped or grated ginger in a tablespoon of olive oil.

Add 1 chopped onion and a tin of drained and rinsed chick peas. Add 1 400g tin of chopped plum tomatoes and a pinch of salt . Leave to simmer.

Rinse a cup of rice (brown rice is healthier and harder to overcook!) Drain and boil rice until soft.

Drain the rice and mix it into the sauce. Mix in some chopped coriander leaf and sprinkle with ground black pepper.
