Spicy Scrambled Tofu
Fry 1 clove crushed garlic, 1 finely sliced onion, and 1 finely chopped chilli in a tbsp olive oil on a low heat until the onion becomes soft.
Add 4 cubed tomatoes or a generous handful of chopped cherry tomatoes, 1 heaped tsp tumeric and 1/2 tsp salt .
Cook on a medium heat for a few minutes to eliminate the 'powderyness' of the turmeric, stirring as you go. If it becomes too dry add more tomatoes.
Crumble in a pack (250g) of well rinsed and drained tofu, get the firmest one you can find, mix in well so the tofu becomes yellow.
Add a tbsp chopped fresh coriander and a generous grind of black pepper.
Goes well over wholemeal toast or why not stuff some pittas and serve with a salad.
