Mini Pitta Pizzas
Make one portion of zingy pasta sauce
Spread the sauce, once cooled, onto mini wholewheat pitta breads. If you're pushed for time then just use tomato puree instead.
Slice up a red and yellow pepper, some button mushrooms, red onion and cherry tomatoes and spread evenly over the pittas.
Sprinkle sparingly with vegetarian or soya cheese and grill on a medium heat until the the cheese has melted.
Serve with a fresh salad and never feel guilty about eating pizza again.
