Garlic & Leek Mash
The mash:
Peel and rinse 3 medium mashing potatoes (Maris Pipers are great for this), cube the potatoes and add to a large saucepan.
Add enough cold water to cover the potatoes,add a tsp of salt, put the lid on and bring to the boil. Once boiling, turn the heat down very low and leave, checking occasionally until the potatoes break up readily when stabbed.
The sauce:
Heat a tbsp olive oil in a pan, add as much crushed garlic as your family and friends will allow! Throw in a very finely chopped red onion, and 1 leek (washed) cut finely into rings and 1 tsp of dried mixed herbs.
If you like it spicy, add some chopped red chilli. Cook on a low heat until the leeks have become soft.
Drain the potatoes, put them back in the pan with a splash of soya milk and the sauce, salt and pepper. Mash well until the potato is lovely and creamy.
If it looks too dry add a bit more soya milk and keep mashing. Remember, always add too little and you can put more in later if needed.
If you start the sauce as soon as the potatoes are on they should be ready roughly together.
